I love Couscous.
If you don't know what it is, it is a teeny tiny ball of semolina dough. Akin to pasta, but is found in places like Morocco. It is super simple to make and makes a great alternative side dish to the ordinary- potatoes, rice or pasta.
Couscous for 2-4 people
2 cups couscous
2.5 cups vegetable stock
2 garlic cloves, chopped
1 bay leaf
salt and pepper
diced sundried tomatoes, lemon zest, olives, etc
cucumbers, fresh herbs, etc
1-2 T yogurt (plain greek)
1. Bring the stock to a boil with the garlic, seasonings and sun-dried tomato(etc) list. Any of the flavorings that you want cooked should go in now.
2. Once it comes to a boil, turn off the heat. Add the couscous and cover.
3. Let sit for 5-10 minutes then uncover and fluff with a fork, like you would rice.
4. Add chilled ingredients like cucumber to make it more like a salad, or leave them out and keep it as a warmer side dish.
5. I really like to add the yogurt at the last minute because it makes the couscous all stick together slightly which makes it easier to eat and gives it a slight tang.
