I HEART Trout

I've never been much of a fisherman.

I spent a lot of my childhood living on a man made lake and have memories of fishing, but I don't remember once actually catching something and eating it. And I never went camping, so the idea of catching a fish, butchering it and cooking it over an open fire in the woods is quite obscure to me.

I do love fish though. And in my days at culinary school i looked many a fish in the eye and... well I will save you the gruesome details.

One that we don't eat very often, but often wish we ate more of is trout. Every time we eat it we remember how much we love it.

Sauteed Trout (2 fillets)

1 trout or 2 fillets, skin on
2 T dijon mustard
2 T brown mustard seeds, crushed
1 t salt
1 t pepper
1/4 c flour

1. Rub mustard all over the front and back of both fillets
2. Mix flour and seasonings
3. Put fish in flour and coat, then shake off
4. Heat a nonstick saute pan to med-high and add a thin layer of oil
5. Cook for about 2 minutes per side, don't overcook!

Serve with lemon and a fresh salad.
