Chocolate Chip Almond Biscotti

I don't drink coffee... but I do love biscotti.

This is one of my favorite recipes and can be made even better by being dipped in chocolate. But really- what isn't better dipped in chocolate?

Chocolate Chip Almond Biscotti

2 eggs
1/2 melted butter, cooled
3/4 c sugar
1 t vanilla
2 c flour
1 1/2 t baking powder
1/2 t salt
1/4 c sliced almonds
1/2 c chocolate chips

1. Mix eggs and sugar and beat until light yellow. Add butter and vanilla.
2. Add dry ingredients and mix. Should be like a thick batter.
3.Line a sheet pan with parchment paper or a silpat and preheat the oven to 350 degrees.
4. Form the dough into a log on the sheet pan. It should be long skinny and pretty flat, if you have a hard time forming it try to wet your hands and form it.
5. Bake for 20 minutes until the crust is brown but it is still soft.
6. Let cool for ten minutes, turn the oven down to 300 degrees and slice biscotti into thick slices.
7. Turn the cookies on their sides and bake again for 15 more minutes, until they are dry and have some color.
Serve.
